Chicken, Rice and Fruit Casserole
1 medium onion, chopped 1/3 cup chopped celery 2 cups cooked, chopped chicken or turkey 2 tablespoons butter 1 ½ cups uncooked instant rice 1 – 8 ounce package dried fruit, cut into fourths 2 tablespoons raisins 2 teaspoons chicken bouillon granules ½ teaspoon salt ¼ teaspoon cinnamon ¼ teaspoon thyme 1/8 teaspoons pepper 14/ cup chopped pecans
In a microwave safe casserole dish, combine the onion, celery and butter. Microwave 2-3 minutes. Onion should be tender. Stir in everything else but the pecans. Cover and microwave 10-12 minutes, stirring once, halfway thorough. Water should be absorbed. Stir in pecans and serve.
