1 Cup sour cream 1 8oz. pkg. cream cheese, soft 3 5oz. containers creme de brie (or 15 oz. soft brie, rind removed) 1/2 C. grated parmesan cheese 1 1/2 C. chopped prociutto (I would brown it in saute pan and get extra fat out and make it crispy) 1/4 C. chopped green onion (or shallot would be good) 1/2 tsp. pepperoncini (hot red pepper flakes) preheat oven 375 Lg. bowl....combine sour cream, cream cheese, brie and parm. beat at medium speed (w/ hand mixer) until smooth. (you could do this by hand I think) add prosciutto, onions and red pepper....fold in. spread in baking dish (8") bake 15-20 (bubbly) serve with crostini (olive oil on baquette slices, toasted and rubbed with garlic) or crackers....

Wow, this sounds AWESOME. I actually have a pot-luck coming up on Tuesday but I'm not sure I have the energy to do this. Maybe I'll save it for a family gathering when I can eat half of it myself, lol.
