Here's an easy recipe. Probably better for a weekend, or a night you have time to prep. I found the butternut squash kind of hard to work with, so it took me a while to peel and chop it.
About 2 pounds of pork roast 1/4 orange marmalade (I subbed apricot spread that was sugar free) 2 cloves chopped garlic About 2 pounds butternut squash, peeled and cubed about 2 inches each piece
Place squash pieces around the edge of the crockpot, place pork in the middle, it will overlap. Salt and pepper the squash and pork. Blend jam and garlic, spread over pork.
Cook on low for 7-8 hours.
It was delicious and tender! Yummy!
