This is easy but probably best for the weekend because you won't want to leave it in the crockpot for too long. Now I got this recipe out of "Parents" magazine but had to make a slight alteration. The turkey and stuffing turned out EXCELLENT, moist and delicious. Excited to have leftovers for turkey sandwiches.
6-7 pound turkey breast (bone-in is fine) 1 package of dry stuffing mix (such as Stove Top) 1-1/4 cups water (not in original recipe) 1 Tbsp butter (plus a little extra if desired) 1 tsp soy sauce 1 tsp paprika 1/4 tsp crushed rosemary 1/4 tsp poultry seasoning
1. Spray bottom of crockpot with cooking spray. 2. Put dry stuffing mix in the bottom. 3. Place turkey breast skin up on top of stuffing mix. 4. Gently melt butter with soy sauce and seasonings. Brush onto turkey breast. 5. Cook on low for 5-1/2 to 6 hours (make sure internal temp of turkey is 160 degrees)
Now this is the part that wasn't in the "Parents" recipe but I was becoming doubtful so at about 4 hours into it, I gently poured the water onto the stuffing only (not onto the turkey) and put a few very small pats of butter onto the stuffing. It turned out PERFECT this way but I'm guessing you could add the water in the beginning too. Not sure why it wasn't in the original recipe because I just couldn't see there being enough juice in the turkey to moisten the stuffing.
Anyway this turned out to be a GREAT, easy but homecooked meal. (I served it with some Green Giant mixed veggies with Tuscan sauce and it was perfect.)

MMMmmm!! Dh LOVES Turkey and dressing! LOL! I might have to give this one a try this weekend and maybe have it cooking during our open house K~
