Any suggestions on what I should pack for a long car trip and what I should just leave behind. I have a nearly one year old and I'm wondering if I should just buy diapers/wipes/food once I get to my destination, or if I should try to pack it.
Also what are some really important things to take with?

Hi!
Well first I would suggest a portable dvd player! I'd also take some sort of blanket so that the one year old can crawl around if he/she isn't walking yet. Take snacks and some new small toys for the car. I've always taken diapers, wipes, and baby food with me just because I don't want to go looking for a store on my vacation.

We pack enough food for the trip plus the first day. I usually pack the diapers/wipes but I could see buying them there too. Then go shopping when we get there. By having enough for the first day it gives you time to get the lay of the land as to where to shop and if you are running late you don't have to rush out to buy anything. Also if were you are staying has a washer/dryer, use it. It's so much easier to wash a load or two especially if you are going to have wet towels anyway than try to figure out how many clothes you may or may not need.
Bring a few toys. We took a few and bought a few when we got there.
Don't take a highchair. We went with friends to Myrtle Beach and they actually brought one. We just used the stroller to feed our ds and it worked great. I think they brought everything but the kitchen sink.
Bring music CDs for the car ride if it's long. DS loves to listen to the music when the DVD player batteries die.

Everybody has really great tips. I guess mine would depend on HOW long a drive and HOW long are you staying? If you're staying for a week or more, you might as well buy some diapers/wipes once you're there (bring some too), if you're going to have easy access to a store. Does your baby still like the exersaucer? You can break that down and it won't take up a lot of room and will keep baby safe and secure. Other than that, I love the blanket idea with some toys. Maybe bring a couple favorites and buy a couple inexpensive new toys to give once you're there. Other things to remember if these apply: pacifiers, a favorite lovey, bottles, formula?, breast pump?, baby food with special dishes/spoons, infant tylenol & thermometer, special shampoo/body wash, sippy cup(s).

Good tip about the baby tylenol. I also take our baby inflatable tub if we are going for a week.
We are going away in July and I'm getting nervous already.

We just got back from a 3 week trip. I knew that getting to the store in the first few days would be hard, so I packed enough supplies for 5 days and then shopped when I got there. I can't imagine lugging all the supplies I'd have needed for 3 weeks!

I'd carry enough diapers/wipes/food to get me through a couple of days and then buy the rest there. I'm not very organized though!
Last year when we went to the beach, I took a rubbermaid box full of his fav toys and books along with a portable booster seat. I also took several of his favorite videos/dvds. The condo we rented had a dvd/vcr. We bought a portable dvd player for a trip this year which helps on the long car or plane ride.

We are going on vacation and I'm so stressing. This is our first vacation with two little ones. I love the idea of the rubbermaid box and I need to charge the DVD player.

Speaking of Rubbmaid boxes.... If there are any campers out there, we saw a great idea that we intend to implement on our next long camping trip. Instead of packing the children's clothes in duffel bags or suitcases, pack them in those transparent, flat (I think they're designed to go under a bed) Rubbermaid containers. You don't have to dig through them to find what you're looking for and they stack easily out of the way.

Ad I have those containers under the cribs for storage, they are great! I never thought about using them for camping. Although we camp pretty infrequently and it usually involves a cabin with showers.....

AD, That's a great idea. I'm actually thinking that might be good for our trip too even though we aren't camping. They'll be easier to put in the car than bags and you can stack them to carry them in. HMMM.. I need to think on this one.
