Apple Cinnamon Popover
Ingredients:
* 1 cup thawed frozen egg substitute * 3/4 cup all purpose flour * 1/2 cup applesauce (no sugar added) * 1/3 cup low fat buttermilk (1% milk fat) * 2 Tbsp. plus 2 tsp. reduced calorie margarine (tub), melted and cooled * 1 tsp. ground cinnamon * 3/4 tsp. granulated sugar * 1/4 tsp. baking soda
Directions:
1. Preheat oven to 425 degrees. Spray 4 10-ounce custard cups with nonstick cooking spray; set aside. 2. In blender process all ingredients until smooth. Pour 1/4 of batter into each prepared cup. Set cups on baking sheet and bake in middle of center oven rack for 25 minutes. Until puffed and golden brown. 3. Using a knife, pierce the top of each popover to allow steam to escape; bake 5 minutes longer.
