Here are a few of my favorite cookie recipes. Please add yours to the list.
Kolacky's
1 cup butter
1 8oz cream cheese
1 Tbl milk
1 Tbl sugar
1 egg yolk, beaten
1 1/4 cup all purpose flour
1/2 tsp baking powder
Solo Almond Paste / Solo Fruit filling (but not pie filling)
or Polamer All Fruit
Cream butter, cream cheese, milk and sugar. Add yolk. Stir flour and baking powder together. Add to liquid mixture, blend well. Refrigerate 4 hours or half hour in the freezer.
Roll out dough on lightly floured surface. Roll to about 1/4 inch thickness. Cut out with a round cookie cutter. I use a 1/8 tsp measuring spoon to add the filling to the cookie. Add either the almond paste or any of the solo filings. If you can't find solo in your baking isle use Polamer All Fruit. Bake 400 for 10/15 minutes. Dust with powdered sugar when they are done.

1 stick butter
1/2 to 1 package graham cracker crumbs
1 small package chocolate chips
1 small package coconut
1 small package chopped pecans
2 cans Eagle Brand condensed milk
Melt your butter and mix with graham cracker crumbs. Create a layer on the bottom of a 13x9 pan about 1/2 inch thick. Then just layer the rest of the ingredients in the order listed. Finally pour Eagle Brand milk over the dry ingredients.
Bake at 350 for 30 minutes. Cut into squares.
Chocolate Chip Cheeseball
This isn't a cookie but I love taking this to work during the holidays.
8 oz cream cheese - softened
1 stick butter - softened
3/4 cup powdered sugar
2 Tbl brown sugar
3/4 cup mini chocolate chips
1 small package chopped pecans
Mix all ingredients and serve with graham cracker sticks.
