This is a family tradition in our house. We make this up the night before Christmas and when we wake up in the morning we just pop it into the oven and in an hour it's ready. We usually start opening presents and then we take a break to eat breakfast.
2 1/2 cups croutons (I usually get seasoned) 1 lb sausage 5 eggs 2 1/4 cups milk 1 can cream of celery 1 - 10oz package frozen spinach 4oz shredded cheddar 4oz shredded montery jack 1/4 tsp dry mustard or just a few squeezes of regular mustard
Grease a 13x9 pan with butter. Spread croutons in pan. Cook sausage and spread over the top of croutons. Whisk eggs and milk. Pour over croutons. Stir soup, spinach, cheese and mustard and pour over eggs. Refrigerate overnight. Bake at 325 for 50-55 minutes.
