I've been looking for a whole wheat banana bread recipe that tasted like the non-whole-wheat banana bread my mom made when I was growing up. No luck! So I did little experimenting and came up with my own recipe that tastes pretty darn good.
2 cups whole wheat flour 1 tsp. baking powder 1 tsp. baking soda 1/2 cup brown sugar 1/2 cup Splenda 1/4 tsp. salt 1-2 very ripe bananas, mashed 2 eggs 1/2 cup applesauce 2 tbsp oil 1/3 cup vanilla yogurt
Preheat oven to 350. Mix all dry ingredients in a big bowl. Mix all moist ingredients into another bowl. Gradually add the moist ingredients into the dry. Pour into a greased/sprayed bread pan. Bake for 55 minutes.

Yummy. I have some bananas that fit in the very ripe category! I'll try this recipe this weekend.
