Okay I stole this from "Parents" magazine but I gave them their title because it's a sneaky way to get some veggies/vitamins into your kids' dessert. There are only two ingredients:
a box of chocolate cake mix a 15 oz. can of pumpkin
That's it! Mix them together and bake into a mini or regular cupcake tin. The batter will seem much thicker than you're expecting (more like dough) but that's okay, they'll turn out just fine.

okay, this recipe intrigued me so I HAD to try it. This is my new favorite thing EVER! Amelia LOVES them so much...more than regular cupcakes! They're so moist! I noticed that they tasted a little like chocolate muffins, so the second time I made them I added chocolate chips.
A friend of mine told me that they suggested this at her Weight Watchers meeting because they have so much less fat and so much more fiber. She suggested that I try it with spice cake next.
Thank you so much for posting this!
