- 1 pound browned ground beef or meatless burger (like Morningstar Farms)
- 1 packet taco seasoning
- 1 28-oz can diced tomatoes, not drained
- 2 16-oz cans fat-free refried beans
- 1 14-1/2 oz can fat-free beef broth
- 1 15-oz light red kidney beans, not drained
- 1 15-1/4 oz can whole kernel golden sweet corn, not drained
1. Spray slow cooker with nonfat cooking spray 2. Mix burger, taco seasoning, tomatoes, refried beans, beef broth, kidney beans, and corn. 3. Cook on low for 8-10 hours. 4. If desired, sprinkle with fat-free cheddar cheese or crushed baked tortilla chips. If made with meatless burger, each 1-cup serving only has 172 calories, 1 g fat, 8 g Fiber and 14 g Protein.

Okay, I'm finally trying this today. I must say it's odd to making anything called "Chowder" when it's 90 degrees out! But I figured it's nice not to have to turn on the oven. It was VERY easy to put together, which is a definite plus. I'll give reviews on the taste tomorrow!

So this was pretty good. It's more of a "taco chili" than a chowder. We sprinkled a little cheese on top and some crushed tortilla chips. Dh had two bowls.
